"The spirit of Federico Fellini has recently infiltrated the Capitol Hill neighborhood. Varro, which opened in April, is a new bar, coffeehouse, restaurant and nightclub located at 12th Ave. and E. Pine. Boasting a distinct vibe, Varro offers a new twist on the Seattle coffee, beverage and culinary scene by infusing it with an unpredictable Italian culture and spirit.
Varro takes design cues from La Dolce Vita and other classic Fellini films," said Managing Partner Glenn Walker. "Our goal is to provide a fun dining and drinking experience in a chic, comfortable and friendly environment."
In addition to serving Lavazza coffee, the bar, named after Roman scholar Marcus Terentius Varro, touts a full wine and cocktail list, featuring Italian-inspired classic cocktails as well as carefully selected Italian and Washington wines.
Varro's traditional Italian menu offers a reasonably priced fare showcasing such delicious dishes as a rustic and creative antipasti for sharing; porchetta and polenta, saffron stewed octopus, and baked rigatoni with sugo. Varro uses locally sourced and fresh ingredients whenever possible.
The Varro cocktail list draws rave reviews from customers and critics alike. Offerings include house specials such as the Amaro Di Americano, Varro Martini and The Hill.
In addition to a fun, spirited and whimical mural from local Capital Hill Artist and Varro designer Elizabeth Montgomery, the bar features a house DJ five nights a week, spinning a combination of downtempo, lounge, house, and euro jazz beats, all infused with Italian tones and vocals. Varro offers a classy club scene with music and dancing every Friday and Saturday night after 10 pm.
Varro is open for coffee, lunch, happy hour, dinner, late night every day, and features a specialty brunch menu on Saturdays and Sundays from 11am to 4pm.
